Delicately pleated and lantern-shaped, these peppers are mildly hot with the initial bite, but the heat intensifies in the mouth. These peppers can be harvested while green or when fully ripened red. With adequate care, the Caribbean Red Pepper plant grows to about 30 inches in height and widths of about 15 inches. When cooking with this firecracker, use sparingly – just a few grams should suffice.
The habanero pepper is scorching hot, aromatic and deeply flavored. With a shiny orange color, its shape resembles a lantern. It enlivens and delivers a punch to fresh salsas, added to vinegar for soups, stews and braises but very little is needed. Habanero cultivars are known to be the hottest peppers in the world.
These Caribbean peppers ripen from green to vermilion and are typically pleated and corrugated. The Scotch Bonnets are not as flaming hot as they appear. Such peppers are often used when making special Jamaican sauces and fresh hot salsas. Jamaica’s Scotch Bonnet is one of the world’s most potent chilis.
